We love Irish Soda Bread in our house! This is a super simple recipe that makes 2 loaves and just requires just a few minutes of kneading which is a perfect job for kids! You can easily double the recipe so that you use the entire container of buttermilk because if you are like me I never know what to do with the rest of the container! Then you share share a little Irish love with some neighbors or freeze some loaves for later since the finished bread freezes well. Enjoy! 


Irish Bread

4 cups flour

1 teaspoon salt

3 teaspoons baking powder

1 teaspoon baking soda

¼ cup sugar

¼ cup butter

1 egg

1 ¾ cups buttermilk

2 tablespoons caraway seeds (optional

1 cup golden raisins

1 cup brown raisins

Combine in a large bowl the flour, salt, baking powder, soda, sugar and caraway seeds.  Add butter and cut in with a pastry knife.  Beat egg slightly and mix with buttermilk; add to dry ingredients and stir until well blended.  Turn out onto a floured board and knead until smooth, 2 to 3 minutes.

Divide dough in half and shape each half into a round loaf and place onto a grease cookie tray.  With a sharp knife, cut  crosses on top of the loaves, about ½ inch deep in the middle.  Bake at 375 degrees for 35-40 minutes.  Check with a toothpick to make sure the middle is cooked.  Makes 2 loaves.
